Pineapple Spice Muffins

Pineapple Spice Muffins

Muffins are our number one sweet treat, especially with coffee on the weekend. Try these moist pineapple muffins, with plenty of goodness in them.

Ingredients

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp mixed spice
  • 1 1/2 cups wholemeal flour
  • 1 cup rolled oats
  • 1/2 cup sultanas
  • 1/2 cup golden syrup
  • 225 gram can crushed pineapple in natural juice
  • 1 egg
  • grated rind 2 oranges
  • 1/2 cup orange juice
  • 1 cup low-fat milk
  • 3/4 cup non-fat plain yoghurt
  • 2 tblsp oil

Method

  1. Sift flour, baking powder, baking soda and mixed spice into a large bowl. Stir in the wholemeal flour, rolled oats and sultanas.
  2. In a bowl mix together the golden syrup, pineapple and juice, egg, orange rind and juice, milk, yoghurt and oil.
  3. Pour the pineapple into the flour mix and fold together gently.
  4. Divide evenly among 12-16 lightly-oiled muffin tins.
  5. Bake at 190°C for 18-20 minutes until well-risen and golden. Transfer to a cake rack to cool.
  6. Serve dusted with icing sugar.
