Muffins are our number one sweet treat, especially with coffee on the weekend. Try these moist pineapple muffins, with plenty of goodness in them.
Ingredients
- 1 1/2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp mixed spice
- 1 1/2 cups wholemeal flour
- 1 cup rolled oats
- 1/2 cup sultanas
- 1/2 cup golden syrup
- 225 gram can crushed pineapple in natural juice
- 1 egg
- grated rind 2 oranges
- 1/2 cup orange juice
- 1 cup low-fat milk
- 3/4 cup non-fat plain yoghurt
- 2 tblsp oil
Method
- Sift flour, baking powder, baking soda and mixed spice into a large bowl. Stir in the wholemeal flour, rolled oats and sultanas.
- In a bowl mix together the golden syrup, pineapple and juice, egg, orange rind and juice, milk, yoghurt and oil.
- Pour the pineapple into the flour mix and fold together gently.
- Divide evenly among 12-16 lightly-oiled muffin tins.
- Bake at 190°C for 18-20 minutes until well-risen and golden. Transfer to a cake rack to cool.
- Serve dusted with icing sugar.
