Always popular on the barbecue, this marinade has a lovely sweet flavour thanks to the pineapple juice and spices. The marinade would also work well with pork and fish.
Ingredients
- 1 cup pineapple juice
- 2 tblsp balsamic vinegar
- 2 tblsp brown sugar
- 1 tsp minced garlic
- 2 tsp ground allspice
- ½ large red chillies, deseeded and chopped
- 1.5 kgs chicken wings
Method
- In a resealable bag put the pineapple juice, vinegar, sugar, garlic, allspice and chillies. Seal and shake to mix.
- Add the chicken wings and seal. Toss to coat. Refrigerate for 1-2 hours or up to overnight.
- Barbecue on a hot well-oiled barbecue plate or grill bars, turning occasionally until golden and well cooked. Serve with grilled lime wedges.
Cooks Tips
- If you do not have balsamic vinegar, use wine or cider vinegar and add an extra tablespoon of brown sugar. - Dark-brown sugar adds great flavour to this marinade.
