Ingredients
- ¾ cup macadamia nuts, roasted and cooled
- 250 grams large Camembert or Brie, or similar style cheese at room temperature
- ¼ cup finely chopped or minced dried pineapple
- ¼ cup cream cheese
- 1 tblsp chopped fresh mint or chives
- good pinch curry powder
Method
- Chop macadamia nuts roughly and set 3 tblsp aside for top.
- Using a sharp knife cut a thin top off the cheese and discard the rind.
- Using a teaspoon, scoop out soft cheese and place in a small bowl. Mix in the macadamia nuts, pineapple, cream cheese, herbs and curry powder. Stir until mixture is soft and creamy.
- Spoon the mixture into the empty shell. Sprinkle the reserved macadamia nuts on top. Serve at room temperature with crackers.
