Pineapple And Macadamia Pate


  • ¾ cup macadamia nuts, roasted and cooled
  • 250 grams large Camembert or Brie, or similar style cheese at room temperature
  • ¼ cup finely chopped or minced dried pineapple
  • ¼ cup cream cheese
  • 1 tblsp chopped fresh mint or chives
  • good pinch curry powder


  1. Chop macadamia nuts roughly and set 3 tblsp aside for top.
  2. Using a sharp knife cut a thin top off the cheese and discard the rind.
  3. Using a teaspoon, scoop out soft cheese and place in a small bowl. Mix in the macadamia nuts, pineapple, cream cheese, herbs and curry powder. Stir until mixture is soft and creamy.
  4. Spoon the mixture into the empty shell. Sprinkle the reserved macadamia nuts on top. Serve at room temperature with crackers.
