Pineapple And Date Fruit Cake

Nobody will ever guess that this cake is sugar and fat reduced.


  • 2 cups wholemeal flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp mixed spice
  • 439 gram can crushed pineapple in syrup (unsweetened)
  • 1 cup orange juice
  • ½ cup dried apricots
  • 1½ cups chopped dates
  • grated rind one orange
  • ¼ cup light olive oil or melted butter
  • ½ cup whole almonds


  1. Mix the flour, baking powder, baking soda and spice together in a bowl.
  2. Simmer the pineapple with syrup, orange juice, dates, apricots and orange rind together for 5 minutes until mushy. Cool well.
  3. Stir gently into the dry ingredients with the oil or butter.
  4. Turn into a well-greased and paper-lined 20cm square cake tin. Arrange the almonds on top.
  5. Bake at 160ºC for 50 minutes. Cool for 10 minutes before turning out on to a cake rack to cool completely.
