Pears poached in honey and lemon balm


  • 1 litre boiling hot water
  • ½ cup honey
  • ½ cup sugar
  • 10-12 fresh lemon balm leaves
  • 6 pears, peeled, cored and quartered
  • extra lemon balm leaves or mint leaves for garnish


  1. Put the hot water, honey, sugar and lemon balm into a saucepan and simmer for 5 minutes.
  2. Add the pears and simmer ever so gently for 30 minutes until the fruit is soft.
  3. Lift the fruit carefully from the saucepan and place in a bowl. Reduce the cooking syrup down by a third and then pour over the pears. Cool and then refrigerate until chilled.
  4. Serve garnished with fresh lemon or mint leaves and vanilla ice cream.

Cooks Tips

- You can use quinces instead of pears.
