Ingredients
- 1 litre boiling hot water
- ½ cup honey
- ½ cup sugar
- 10-12 fresh lemon balm leaves
- 6 pears, peeled, cored and quartered
- extra lemon balm leaves or mint leaves for garnish
Method
- Put the hot water, honey, sugar and lemon balm into a saucepan and simmer for 5 minutes.
- Add the pears and simmer ever so gently for 30 minutes until the fruit is soft.
- Lift the fruit carefully from the saucepan and place in a bowl. Reduce the cooking syrup down by a third and then pour over the pears. Cool and then refrigerate until chilled.
- Serve garnished with fresh lemon or mint leaves and vanilla ice cream.
Cooks Tips
- You can use quinces instead of pears.
