Peach Surprise

This simple and quick dessert will be a great hit with all the family.



  • 1 1/4 cups self raising flour
  • 1/4 cup sugar
  • 1/2 cup coconut
  • 100 grams melted butter
  • 1 tsp orange rind
  • 2 tablespoons orange juice
  • 1 egg, beaten

Filling and Topping

  • 425 gram can sliced peaches, drained
  • 250 gram tub sour or lite sour cr
  • 2 eggs
  • 2 tablespoons orange juice
  • 1 tsp finely grated orange rind
  • icing sugar


  1. Combine the flour, sugar, coconut, melted butter, orange rind and juice and egg together to form a dough. Press into 23 cm well - greased and floured flan dish.
  2. Arrange the sliced peaches over the base. Mix the eggs, sour cream, orange juice and rind together and pour on top of the peaches.
  3. Bake at 180 degrees Celsius for 40-45 minutes until the topping has set and is lightly golden. Serve in wedges dusted with icing sugar to garnish.
