Ingredients
- 4-5 ripe peaches, halved, stones removed, sliced into wedges
- 1 small red onion, peeled and sliced into fine wedges
- 4-5 cups baby spinach leaves
- 300 grams goat\'s feta, drained and diced or crumbled
- ¾-1 cup Kalamata olives
- 1 cup mixed fresh herb leaves, basil, marjoram, Italian parsley, chervil
Dressing
- ¼ cup extra virgin olive oil
- 2 tblsp white wine or cider vinegar
- 1 tblsp honey
- 1 tsp prepared mustard (Dijon is nice here)
Method
- In a large bowl, toss together the peaches, red onion sliced, spinach leaves, feta, olives and herbs.
- Pour over the dressing, toss well and serve immediately.
Dressing
- In a screw top jar, combine the olive oil, vinegar, honey, mustard with a good seasoning of black pepper. Shake well.
