Peach, Feta Cheese And Spinach Salad


  • 4-5 ripe peaches, halved, stones removed, sliced into wedges
  • 1 small red onion, peeled and sliced into fine wedges
  • 4-5 cups baby spinach leaves
  • 300 grams goat\'s feta, drained and diced or crumbled
  • ¾-1 cup Kalamata olives
  • 1 cup mixed fresh herb leaves, basil, marjoram, Italian parsley, chervil


  • ¼ cup extra virgin olive oil
  • 2 tblsp white wine or cider vinegar
  • 1 tblsp honey
  • 1 tsp prepared mustard (Dijon is nice here)


  1. In a large bowl, toss together the peaches, red onion sliced, spinach leaves, feta, olives and herbs.
  2. Pour over the dressing, toss well and serve immediately.


  1. In a screw top jar, combine the olive oil, vinegar, honey, mustard with a good seasoning of black pepper. Shake well.
