Ingredients
- 1¼ cups self-raising flour
- ¼ cup sugar
- ½ cup dessicated coconut
- 100 grams butter, melted
- 1 teaspoon grated orange rind
- 2 tablespoons orange juice
- 1 egg, beaten
- Filling and topping
- 425 gram can sliced peaches, drained
- 250 gram tub sour or lite sour cream
- 2 eggs
- 2 tablespoons orange juice
Method
- Combine the flour, sugar, coconut, butter, orange rind and juice and egg to form a dough. Press into a 23cm well-greased and floured flan dish.
- Arrange the sliced peaches on the base and mix the sour cream, eggs, orange juice and rind. Pour over the peaches.
- Bake at 180ºC for 40-45 minutes until the topping has set and is lightly golden. Serve in wedges dusted with icing sugar to garnish.
Cooks Tips
Variation - If you are not a fan of coconut, use ground almonds, walnuts or extra flour.
