Peach and coconut slice


  • 1¼ cups self-raising flour
  • ¼ cup sugar
  • ½ cup dessicated coconut
  • 100 grams butter, melted
  • 1 teaspoon grated orange rind
  • 2 tablespoons orange juice
  • 1 egg, beaten
  • Filling and topping
  • 425 gram can sliced peaches, drained
  • 250 gram tub sour or lite sour cream
  • 2 eggs
  • 2 tablespoons orange juice


  1. Combine the flour, sugar, coconut, butter, orange rind and juice and egg to form a dough. Press into a 23cm well-greased and floured flan dish.
  2. Arrange the sliced peaches on the base and mix the sour cream, eggs, orange juice and rind. Pour over the peaches.
  3. Bake at 180ºC for 40-45 minutes until the topping has set and is lightly golden. Serve in wedges dusted with icing sugar to garnish.

Cooks Tips

Variation - If you are not a fan of coconut, use ground almonds, walnuts or extra flour.
