Ingredients
- 1 cup cooked orzo pasta or rice
- ½ cup grated cheese
- 50 grams crumbled blue cheese
- 100 grams finely diced ham
- 2 eggs
- salt, pepper and prepared mustard to season
- 4 medium-large courgettes
Method
- Mix together the pasta or rice, cheese, ham and eggs. Season well with salt, pepper and mustard to taste.
- Prick the courgettes with a fork and microwave on high power for 5 minutes or until they have just softened. (Cooking time will depend on the wattage of the microwave and the size of the courgettes).
- Cut the courgettes in half lengthwise and scoop out the centre. Chop roughly and add to the cheese mixture. Refill the courgettes.
- Bake at 200ºC for 25 minutes or until hot and golden.
