Pasta, ham and cheese-stuffed courgettes

Pasta, ham and cheese-stuffed courgettes


  • 1 cup cooked orzo pasta or rice
  • ½ cup grated cheese
  • 50 grams crumbled blue cheese
  • 100 grams finely diced ham
  • 2 eggs
  • salt, pepper and prepared mustard to season
  • 4 medium-large courgettes


  1. Mix together the pasta or rice, cheese, ham and eggs. Season well with salt, pepper and mustard to taste.
  2. Prick the courgettes with a fork and microwave on high power for 5 minutes or until they have just softened. (Cooking time will depend on the wattage of the microwave and the size of the courgettes).
  3. Cut the courgettes in half lengthwise and scoop out the centre. Chop roughly and add to the cheese mixture. Refill the courgettes.
  4. Bake at 200ºC for 25 minutes or until hot and golden.
