Passionfruit yoghurt

Passionfruit yoghurt


  • 500 grams thick Greek-style yoghurt
  • 1 teaspoon vanilla essence
  • 2 tablespoons icing sugar
  • ½ cup passionfruit pulp


  1. Stir together the yoghurt, vanilla essence and icing sugar.
  2. Place in a serving bowl and stir through the pulp, so that you can see delicious swirls of passionfruit.

Cooks Tips

Fresh passionfruit pulp is delicious, but if using the bottled pulp, stir the pulp well before adding to the yoghurt and omit the icing sugar. Variations: - Use the seeds of 1 vanilla pod, if wished, in place of or in addition to the vanilla essence. - In place of passionfruit pulp, use pureed and sieved canned guava. - Add the grated rind of 1 lime.
