These muffins are nicely sweetened with fresh passionfruit and a surprise streusel centre and topping.
Ingredients
- 3 cups flour
- 2 tablespoons baking powder
- ½ teaspoon salt
- ¾ cup sugar
- 2 eggs
- ½ cup passionfruit pulp (4 large passionfruit)
- 1 cup milk
- few drops vanilla essence
- 100 grams butter, melted and cooled
- Struesel topping
- 50 grams butter
- ¼ cup brown sugar
- ½ cup rolled oats
Method
- Sift the flour, baking powder, salt and sugar into a bowl and make a well in the centre.
- In a jug, mix together the eggs, passionfruit pulp, milk and vanilla essence. Stir into the dry ingredients, with the melted butter.
- Half fill 12 well-greased muffin tins. Sprinkle a little of the streusel topping on each and then top with the remaining batter. Finish with remaining streusel on top.
- Bake at 220ºC for about 15-20 minutes until well risen, golden and cooked.

- Rub together the butter, brown sugar and rolled oats.
Cooks Tips
- You can use bottled passionfruit. These muffins are delicious served with lemon honey (see Lemon Honey and Cream Cheese Muffins).
