Passionfruit muffins

Passionfruit muffins

These muffins are nicely sweetened with fresh passionfruit and a surprise streusel centre and topping.


  • 3 cups flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 2 eggs
  • ½ cup passionfruit pulp (4 large passionfruit)
  • 1 cup milk
  • few drops vanilla essence
  • 100 grams butter, melted and cooled
  • Struesel topping
  • 50 grams butter
  • ¼ cup brown sugar
  • ½ cup rolled oats


  1. Sift the flour, baking powder, salt and sugar into a bowl and make a well in the centre.
  2. In a jug, mix together the eggs, passionfruit pulp, milk and vanilla essence. Stir into the dry ingredients, with the melted butter.
  3. Half fill 12 well-greased muffin tins. Sprinkle a little of the streusel topping on each and then top with the remaining batter. Finish with remaining streusel on top.
  4. Bake at 220ºC for about 15-20 minutes until well risen, golden and cooked.

Cooks Tips

- You can use bottled passionfruit. These muffins are delicious served with lemon honey (see Lemon Honey and Cream Cheese Muffins).
