Serve these tenderloins with a salad greens or vegetables or as pictured here with ratatouille.
Ingredients
- 1 cup finely grated parmesan cheese
- ½ cup dry breadcrumbs
- ½ tsp salt
- ¼ tsp pepper
- 1 egg
- ½ cup milk
- 500-750g fresh chicken tenderloins
- ½ cup flour
- 3-4 tblsp oil (olive is nice here)
Method
- Mix the parmesan, breadcrumbs, salt and pepper together.
- In a separate bowl, beat the egg and milk together.
- Coat the chicken tenderloins in the flour then dip in the egg mix and coat in the crumbs.
- Heat the oil in a frying pan and cook the chicken over a mdoerate heat until golden and tender.
