Parmesan Chicken Tenderloins

Parmesan Chicken Tenderloins

Serve these tenderloins with a salad greens or vegetables or as pictured here with ratatouille.


  • 1 cup finely grated parmesan cheese
  • ½ cup dry breadcrumbs
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 egg
  • ½ cup milk
  • 500-750g fresh chicken tenderloins
  • ½ cup flour
  • 3-4 tblsp oil (olive is nice here)


  1. Mix the parmesan, breadcrumbs, salt and pepper together.
  2. In a separate bowl, beat the egg and milk together.
  3. Coat the chicken tenderloins in the flour then dip in the egg mix and coat in the crumbs.
  4. Heat the oil in a frying pan and cook the chicken over a mdoerate heat until golden and tender.
