Ingredients
- 1¼ cups flour
- ¼ teaspoon baking powder
- 75 grams chilled butter, diced
- ½ cup grated Parmesan cheese
- 4-5 tablespoons ice cold water
Method
- Sift the flour and baking powder into a bowl. Rub in the butter until the mixture resembles fine crumbs. Add the Parmesan cheese, stir to combine.
- Using a knife, stir in sufficient water until the pastry begins to form large clumps. Turn out onto a lightly floured bench and knead lightly to bring together.
- Wrap in greaseproof paper or plastic wrap and rest in the refrigerator until required.
