Parmesan cheese pastry

Parmesan cheese pastry

Ingredients

  • 1¼ cups flour
  • ¼ teaspoon baking powder
  • 75 grams chilled butter, diced
  • ½ cup grated Parmesan cheese
  • 4-5 tablespoons ice cold water

Method

  1. Sift the flour and baking powder into a bowl. Rub in the butter until the mixture resembles fine crumbs. Add the Parmesan cheese, stir to combine.
  2. Using a knife, stir in sufficient water until the pastry begins to form large clumps. Turn out onto a lightly floured bench and knead lightly to bring together.
  3. Wrap in greaseproof paper or plastic wrap and rest in the refrigerator until required.
