Ingredients
- 340 grams Sealord Simply Natural Calamari Rings, defrosted
- ¼ cup flour
- 2 tblsp coarse cornmeal
- 1 tsp ground black pepper
- ¼ cup finely chopped fresh oregano
- 75-100 grams unsalted butter
Method
- Rinse and drain the calamari. Pat dry on absorbent paper and sprinkle with a little salt.
- Mix together the flour, cornmeal, black pepper and two tablespoons fresh oregano. Toss the calamari in the mix to coat lightly.
- Heat half the butter in a non-stick pan and pan fry the calamari for 1-2 minutes until just coloured and cooked. This may be best done in batches to ensure the calamari fries quickly and evenly and does not stew.
- Drain the calamari on absorbent paper and sprinkle with salt, pepper, remaining oregano and any butter left in the pan. Serve with bread, rocket, olives and aioli for dipping.
