Oregano And Black Pepper Crispy Calamari

Ingredients

  • 340 grams Sealord Simply Natural Calamari Rings, defrosted
  • ¼ cup flour
  • 2 tblsp coarse cornmeal
  • 1 tsp ground black pepper
  • ¼ cup finely chopped fresh oregano
  • 75-100 grams unsalted butter

Method

  1. Rinse and drain the calamari. Pat dry on absorbent paper and sprinkle with a little salt.
  2. Mix together the flour, cornmeal, black pepper and two tablespoons fresh oregano. Toss the calamari in the mix to coat lightly.
  3. Heat half the butter in a non-stick pan and pan fry the calamari for 1-2 minutes until just coloured and cooked. This may be best done in batches to ensure the calamari fries quickly and evenly and does not stew.
  4. Drain the calamari on absorbent paper and sprinkle with salt, pepper, remaining oregano and any butter left in the pan. Serve with bread, rocket, olives and aioli for dipping.
