Orange, olive and date salad


  • 3 oranges
  • 8 slices prosciutto
  • 6-8 fresh dates
  • 10-12 green olives
  • 70 gram packet pinenuts, toasted
  • 2-3 cups rocket


  • 1 tablespoon verjuice or white wine vinegar
  • 1 tablespoon honey
  • 3 tablespoons lemon or mandarin olive oil
  • 2 teaspoons zahtar spice mix


  1. Peel the oranges and remove the bitter white pith. Segment or dice the oranges.
  2. Tightly roll up each slice of prosciutto and pan-fry until crisp. Cut each roll in half diagonally. Remove the stones from the dates and cut into quarters.
  3. To make the dressing, combine all the ingredients together.
  4. Toss together the oranges segments, prosciutto, dates, olives, pinenuts and rocket with the dressing. Serve soon after preparing.

- Zahtar is a Middle Eastern spice mix available in most supermarkets
