Orange and onion marmalade

Orange and onion marmalade

This simple marmalade is ideal with the potato and cream pie or a steak from the barbecue.

Ingredients

  • 3-4 oranges
  • 2 large onions, peeled and finely sliced
  • 1 cup vinegar
  • 1 tablespoon minced garlic
  • ½ teaspoon ground coriander
  • ½ teaspoon mixed spice
  • ½ cup brown sugar

Method

  1. Using a potato peeler, pare the rind from 1 orange and slice finely. Squeeze the juice from the remaining oranges - you require 1 cup orange juice in total. Add more juice if required.
  2. Put the rind, juice, onions, vinegar, garlic and spices into a saucepan, cover and simmer gentle for 20 minutes or until the onion is tender.
  3. Add the brown sugar and simmer uncovered until the marmalade is thick and syrup-like. Bottle in hot dry jars, seal when cold and keep in the fridge for up to one month. Serve at room temperature.
