Onion Marmalde

Onion Marmalde

Easy to make anytime of the year and perfect with cheese atop a cold meat sandwich, or with grilled sausages as a simple family meal.

Ingredients

  • 4 large onions, peeled
  • ½ cup oil
  • 2 tablespoons minced garlic
  • grated rind and juice 2 oranges
  • 1 teaspoon ground coriander
  • 1 teaspoon mixed spice
  • 1 cup brown sugar

Method

  1. Slice the onions thinly. Heat the oil in a large frying pan and add the onions and cook over a moderate heat for 15 minutes until the onions are soft, stirring regularly to prevent burning.
  2. Add the garlic, orange rind and juice, ground coriander, mixed spice and brown sugar and cook a further 10 minutes until the mixture is thick.
  3. Bottle in hot sterilised jars and cover. Seal when cold.
