Olive Oil Mashed Potatoes

Mashed potatoes will never seem the same again. You need an olive oil with good flavour for this.


  • 750 grams potatoes
  • 4 tablespoons good virgin olive oil
  • ½-¾ cup hot milk
  • salt and white pepper to season
  • extra olive oil for garnish


  1. Cook the potatoes in boiling, salted water for about 12-15 minutes until they are tender. Drain well and mash with a potato masher.
  2. Using a fork, gradually beat in the hot milk. Continue beating well to ensure the potatoes are really light and fluffy. (Depending on the type of potatoes you use, you may need to add more or less milk).
  3. Blend in the olive oil and season well with salt and pepper.
  4. Serve piled high in a serving dish drizzled with extra olive oil and sprinkled with a little crushed white peppercorns and flaky salt to serve.
