You can't beat old favourites and this fudge is one of the sweetest!
Ingredients
- 3 cups sugar
- 1 cup whole milk
- ½ cup cocoa, sifted
- 50 grams butter
- 2 tsp vanilla essence
Method
- Put the sugar, milk and cocoa into a saucepan and stir over a low heat until the sugar has dissolved. Do not allow the mixture to boil at this stage.
- Bring to the boil and then boil rapidly stirring occasionally to prevent burning until a sugar thermometer reaches 116°C.
- Remove from the heat and stir in the butter and vanilla essence and beat until the mixture looses its gloss and starts to become a little grainy. Pour into a greased and lined 20cm square cake tin. Mark into squares and cover and set aside until set. Break into squares to serve.
