Old Fashioned Fudge

  • Makes 48 pieces
Old Fashioned Fudge

You can't beat old favourites and this fudge is one of the sweetest!


  • 3 cups sugar
  • 1 cup whole milk
  • ½ cup cocoa, sifted
  • 50 grams butter
  • 2 tsp vanilla essence


  1. Put the sugar, milk and cocoa into a saucepan and stir over a low heat until the sugar has dissolved. Do not allow the mixture to boil at this stage.
  2. Bring to the boil and then boil rapidly stirring occasionally to prevent burning until a sugar thermometer reaches 116°C.
  3. Remove from the heat and stir in the butter and vanilla essence and beat until the mixture looses its gloss and starts to become a little grainy. Pour into a greased and lined 20cm square cake tin. Mark into squares and cover and set aside until set. Break into squares to serve.
