You can use other dried fruits such as dates, sultanas, currants, or pineapple for variety.
Ingredients
- 1½ cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup oat bran or wheat bran
- ½ cup brown sugar
- ½ cup chopped dried apricots, optional
- 1 banana
- 1 egg
- 2 tablespoons golden syrup or honey
- 50 grams butter, melted
- 1 cup milk
Method
- Sift the flour, baking powder and baking soda into a large bowl. Stir in the bran, sugar and apricots.
- Mash banana and mix with egg, golden syrup or honey, melted butter and milk.
- Gently but quickly fold the wet ingredients into the dry. Divide the mixture evenly between 12 greased muffin tins.
- Bake at 220ºC for 12-15 minutes, serve warm with butter and jam.
