Oaty banana and apricot muffins

Oaty banana and apricot muffins

You can use other dried fruits such as dates, sultanas, currants, or pineapple for variety.


  • 1½ cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup oat bran or wheat bran
  • ½ cup brown sugar
  • ½ cup chopped dried apricots, optional
  • 1 banana
  • 1 egg
  • 2 tablespoons golden syrup or honey
  • 50 grams butter, melted
  • 1 cup milk


  1. Sift the flour, baking powder and baking soda into a large bowl. Stir in the bran, sugar and apricots.
  2. Mash banana and mix with egg, golden syrup or honey, melted butter and milk.
  3. Gently but quickly fold the wet ingredients into the dry. Divide the mixture evenly between 12 greased muffin tins.
  4. Bake at 220ºC for 12-15 minutes, serve warm with butter and jam.
