Nicoise Inspired Grilled Turkish Pide Bread

These crispy flavoured morsels are perfect to accompany a Nicoise or Caesar Salad or serve as a nibble with drinks. Perfect with a chilled dry Sherry.

Ingredients

  • 250 grams butter, softened
  • 50 grams anchovies, well drained
  • 2 tblsp tomato soup powder
  • ΒΌ cup finely grated parmesan or cheddar cheese
  • 2-3 tblsp finely chopped parsley or chives
  • 1-2 tsp minced fresh garlic
  • 1 loaf Turkish Pide bread

Method

  1. Mash together the butter, anchovies, soup powder, cheese, parsley and garlic.
  2. Cut the loaf into 1 cm thick slices and grill one side until toasted.
  3. Spread the untoasted side liberally with the butter mixture and grill until golden. Serve warm.
