New Potatoes With Mint And Chilli Dressing

Following through from the flavours of the coleslaw and summer vegetables, spice up a simple potato salad with new season mint, lime and red chilli.

Ingredients

  • 1 kg small new potatoes, well-washed
  • 1 cup mayonnaise
  • ¼ cup chopped fresh mint
  • 1 red chilli, deseeded and finely chopped
  • 2 tsp grated lime rind
  • 1 tblsp lime juice
  • 1-2 cups fresh rocket leaves
  • ¼ cup roasted peanuts, roughly chopped

Method

  1. Cook the potatoes in boiling salted water for 10-12 minutes or until just tender. Drain well and allow to cool. Halve or quarter if wished.
  2. Mix together the mayonnaise, mint, chilli, lime rind and juice. Season with salt and ground black pepper. Spoon over the warm potatoes and toss to coat well. Add the rocket and place in a serving dish. Garnish with the chopped peanuts and serve at room temperature or chilled as preferred.
