A family favourite with plenty of possible variations.
Ingredients
- 350 grams Quality Mark mince beef
- 1/2 onion, peeled and diced
- 2 tsp minced garlic
- 50 gram packet Chilli, Nacho or Burrito seasoning mix
- 400 gram can tomatoes (try Mexican flavoured)
- 1/2 cup water or tomato juice
- Nachos for 4, your favourite brand
- 1 cup grated cheese
Tomato Salsa
- 2 tomatoes, diced
- 1/2 red onion, peeled and diced
- a little chopped parsley or coriander
- 1 tblsp each oil and vinegar
Avocado Whip
- 2 avocados
- 1/2 cup sour cream
- 2 tblsp chopped parsley or coriander
Method
- Brown the mince, onion and garlic in a dash oil on a lidded frying pan, breaking up the mince with a back of a spoon as it browns.
- Add the seasoning mix, tomatoes and water or juice and simmer covered, for 10-15 minutes.
- Arrange the nachos on a heat-proof plate and then spoon over the mince and cheese. Grill for 2-3 minutes until the cheese begins to melt before topping with the Tomato Salsa and Avocado Whip.
Cooks Tips
If using Burrito Seasoning Mix, you may need to add an extra ½ cup of water as the mixture will thicken.
