Mushroom And Chilli Soup

Ingredients

  • 500 grams button mushrooms, diced
  • ½ cup diced shallots or onion
  • 2 tblsp oil
  • 1 tsp minced garlic
  • 2 red chillies, deseeded and sliced
  • 3 cups chicken stock
  • ¼ cup dark soy sauce
  • 2 cups well-packed spinach leaves, stems removed
  • salt and pepper to season

Method

  1. Cook the mushrooms and shallots in the oil in a saucepan until the mushrooms have browned a little.
  2. Add the garlic, chillies, stock and soy sauce, and simmer gently for 5 minutes.
  3. Add the spinach leaves and simmer only until the spinach has wilted. Season with salt and pepper if wished.
