Moroccan Chermoula Scented Mayonnaise

Moroccan Chermoula Scented Mayonnaise

Chermoula mix is a vigorous blend of cumin, paprika, turmeric, onion, garlic, parsley, coriander, garlic and cayenne. It goes well with gutsy flavoured meats such as beef, lamb and tuna so use this mayonnaise with barbecues, roasts and grills.

Ingredients

  • 1 cup mayonnaise
  • 2 tblsp lemon juice
  • 2 tblsp each chopped fresh parsley and coriander
  • 2 tblsp finely chopped red or white onions
  • 1 large juicy clove garlic, peeled and finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 2 tsp toasted cumin seeds
  • ½ - 1 tsp each turmeric and paprika

Method

  1. In a medium sized bowl combine all the ingredients and stir until smooth. Season with salt and pepper to taste, cover and refrigerate until required. Serve at room temperature.
