Mixed Summer Berry Jellies With Fruit

A tempting combination of two favourite summer berries makes an unusual dessert for all the family.

Ingredients

  • 1 kg strawberries, hulled
  • 2 cups water
  • ½ cup sugar
  • 6 teaspoons gelatin
  • 500 grams frozen blueberries
  • 2 cups water
  • ½ cup sugar
  • 5 teaspoons gelatin

Method

Strawberry

  1. Slice the strawberries and place in a saucepan with the water and sugar. Poach for 10-15 minutes until the strawberries are softened. Strain and discard the fruit pulp. Do not squeeze, as the jelly will be cloudy.
  2. Sprinkle the gelatin over ? cup warm juice and allow to swell. Heat for 15-20 seconds in the microwave or until the gelatin has dissolved. Stir into the strawberry juice.
  3. Pour into a 20cm cake tin or jelly mould and refrigerate for four hours or overnight. Cut into shapes and serve with fresh fruit and blueberry jelly. If wished substitute ? cup water for ? cup of strawberry or raspberry liqueur

Blueberry

  1. Bring the blueberries, water and sugar to scalding point for 10 minutes. Turn off and allow to stand for 10 minutes. Strain, discarding the blueberry pulp.
  2. Sprinkle the gelatin over ? cup of the warm juice and leave to swell and become spongy. Warm in the microwave or over hot water, and stir until completely dissolved. Stir into the slightly warm jelly and pour into a 20cm cake tin or mould.
  3. Refrigerate for four hours or overnight. Cut into shapes and serve with the strawberry jelly and with fresh fruit.

Cooks Tips

- If wished, subsitute ½ cup strawberry or raspberry liqueur for ½ cup water.
