Microwave chocolate cakes

Like most kids, Stevie enjoys baking and these cakes, which she makes regularly, only take a few minutes to cook in the microwave and can also be served as a pudding.

Ingredients

  • ¾ cup flour
  • ½ cup sugar
  • 3 tablespoons cocoa
  • 2 teaspoons baking powder
  • ¼ cup milk
  • ¼ cup oil or melted butter
  • 2 eggs, beaten
  • 1 teaspoon vanilla essence

Method

  1. Lightly grease flour 10-cm ramekins or similar ovenproof dishes. Sift the flour, sugar, cocoa and baking powder together into a bowl and make a well in the centre. In a jug, beat together the milk, oil or butter, eggs and vanilla essence and pour into the dry ingredients. Stir gently to mix together. Divide the mixture evenly between the prepared dishes.
  2. Cook in the microwave on high power for 3½ minutes until well risen and cooked. To test, touch the centre of the cake, which may still look moist and the top 'skin' may lift off but underneath the cake should be cooked. Cook for a further few seconds, if required.
  3. Serve dusted with icing sugar and accompany with fresh cream.
