Mexican sausage tacos

Mexican sausage tacos


  • 6 thick pork or beef sausages
  • 1 onion, peeled and finely chopped
  • 1 red and 1 green pepper, cored and deseeded
  • 400 gram can Mexican tomatoes
  • ½ cup water or chicken stock
  • 2 tablespoons chopped coriander or parsley (optional)
  • about 12 taco shells
  • refried beans
  • fresh summer vegetables, such as sliced cucumber, avocado, tomatoes, lettuce, diced peppers and sour cream


  1. Fry the sausages over a moderate heat in a non-stick frying pan until cooked and golden. Set aside.
  2. Add the onion and red and green peppers to the pan and toss over a moderately hot heat for about 3 minutes.
  3. Stir in the Mexican tomatoes and water or stock. Slice the sausages into 1cm rings and add to the pan. Simmer 5 minutes and then stir in the coriander or parsley if using.
  4. Serve with the refried beans and summer vegetables in the taco shells, with sour cream on the side.
