Ingredients
- 6 thick pork or beef sausages
- 1 onion, peeled and finely chopped
- 1 red and 1 green pepper, cored and deseeded
- 400 gram can Mexican tomatoes
- ½ cup water or chicken stock
- 2 tablespoons chopped coriander or parsley (optional)
- about 12 taco shells
- refried beans
- fresh summer vegetables, such as sliced cucumber, avocado, tomatoes, lettuce, diced peppers and sour cream
Method
- Fry the sausages over a moderate heat in a non-stick frying pan until cooked and golden. Set aside.
- Add the onion and red and green peppers to the pan and toss over a moderately hot heat for about 3 minutes.
- Stir in the Mexican tomatoes and water or stock. Slice the sausages into 1cm rings and add to the pan. Simmer 5 minutes and then stir in the coriander or parsley if using.
- Serve with the refried beans and summer vegetables in the taco shells, with sour cream on the side.
