Mexican chicken

Mexican chicken


  • 400 gram can Mexican spiced tomatoes
  • 6-10 black olives, optional
  • 2 stalks celery, chopped
  • 4 chicken leg and thigh portions
  • ½x 35 gram sachet chilli seasoning
  • ½ cup grated cheese, optional
  • oregano to garnish


  1. Spread the tomatoes over the base of a lasagne-style dish. Scatter the olives and celery on top.
  2. Sit the chicken pieces on top of the tomatoes and sprinkle over the seasoning mix. (Reserve the remaining mix to use another day). Scatter over the cheese, if using.
  3. Bake at 200ºC for 40-45 minutes until the chicken is cooked. Serve garnished with oregano.

Cooks Tips

- If you cannot find a chilli seasoning mix in the supermarket, use a little ground paprika, coriander and chilli.
