
Ingredients
- 400 gram can Mexican spiced tomatoes
- 6-10 black olives, optional
- 2 stalks celery, chopped
- 4 chicken leg and thigh portions
- ½x 35 gram sachet chilli seasoning
- ½ cup grated cheese, optional
- oregano to garnish
Method
- Spread the tomatoes over the base of a lasagne-style dish. Scatter the olives and celery on top.
- Sit the chicken pieces on top of the tomatoes and sprinkle over the seasoning mix. (Reserve the remaining mix to use another day). Scatter over the cheese, if using.
- Bake at 200ºC for 40-45 minutes until the chicken is cooked. Serve garnished with oregano.
Cooks Tips
- If you cannot find a chilli seasoning mix in the supermarket, use a little ground paprika, coriander and chilli.
