Using flavoured canned beans and toasted cashew nuts, you can whip these scrubby patties up in no time at all.
Ingredients
- 1 onion, peeled and finely chopped
- 1 teaspoon minced garlic
- 1 tablespoon Mexican seasoning
- 425 gram can Mexe-Beans, well drained and mashed
- 1 teaspoon dried oregano or 1 tablespoon chopped fresh oregano
- 1 egg lightly beaten
- 1 cup toasted cashew nuts, finely chopped
- 1 cup fresh breadcrumbs
Method
- Heat a dash of oil in a non-stick fry pan. Cook the onion and garlic for 5-6 minutes until they soften. Remove from the heat and mix with Mexican seasoning, mashed canned beans, oregano, egg and the chopped cashew nuts. Season with salt and pepper.
- Shape mixture into 16-18 small patties and toss in the breadcrumbs.
- Heat a little oil in a non-stick frying pan and cook the pattes for 5-6 minutes each side until golden brown. Serve with avocado salsa and an oregano-spiced tomato salsa.
