Meringues And Vanilla Boysenberries

The colours in this dessert will impress everyone.


  • ½ cup sweet white wine (dessert wine)
  • ½ cup sugar
  • 500 gram bag frozen boysenberries
  • 6-8 meringues

Mascarpone Cream

  • ½ cup mascarpone
  • ½ cup cream, lightly whipped
  • 1 tblsp icing sugar (optional)
  • ½ tblsp chopped pistachio nuts


  1. Put the wine and sugar into a saucepan and simmer together for about 2-3 minutes, stirring until the sugar has dissolved.
  2. Bring to the boil and add the boysenberries. Turn off the heat and set aside. When cool transfer to a large glass dish. Serve with the meringues decorated with the Mascarpone Cream and pistachio nuts.

Mascarpone Cream

  1. Fold the mascarpone into the whipped cream, sweeten if wished.

Cooks Tips

- If you have a vanilla pod on hand, scoop out the seed from half a pod and stir into the Mascarpone Cream.
