Melting moments

It is the lemon butter icing that really makes these delicious morsels the mouth-watering sensation we've come to know and love.

Ingredients

  • 275 grams butter, softened
  • ½ cup icing sugar
  • 1 teaspoon vanilla essence
  • 1½ cups pure flour
  • ½ cup cornflour
  • 1 quantity lemon butter icing (see recipe on this website)

Method

  1. Preheat the oven to 160ºC. Lightly grease 1-2 baking trays or line with baking paper.
  2. Beat the butter, icing sugar and vanilla essence together until light and creamy.
  3. Sift together the flour and cornflour and mix into the creamed mixture. Do not overmix.
  4. Roll teaspoonfuls into balls and place on the prepared baking tray.
  5. Dip a fork into flour and shake off the excess. Flatten the dough balls gently by pressing with the tines of the fork. Dip the fork into the flour as needed.
  6. Bake in the preheated oven for 18-20 minutes until the biscuits are firm and beginning to brown a little around the edges.
  7. Transfer to a cake rack to cool. Once cold, join with the lemon butter icing.
