A cooling dessert, particularly good after a spicy main course.
Ingredients
- about 12 large mint leaves
- ½ cup sugar (caster is best here)
- 1 juicy lemon, grated rind
- ½ cup freshly squeezed lemon juice
- 1 cup boiling water
- 1 honeydew melon
Method
- Finely slice the mint and mix with the sugar, lemon juice and boiling water. Stir until the sugar has dissolved. Cool.
- Scoop the seeds out of the melon and discard. Scoop the melon into balls or alternatively peel away the rind and dice the melon.
- Toss the melon with the mint syrup, cover and allow to marinate for 10 minutes or until ready to serve. To serve pile into glasses and if wished accompany with yoghurt.
Cooks Tips
Any syrup left over from the melon is delicious mixed with soda water for a chilled drink or with bubbles for something stronger.
