Melon and prawn salad

A refreshing summer salad with a fairly unusual combination of ingredients. The crisp, sweet melons go exceptionally well with the sharp onion and fresh mint in the dressing. I like prawns with it best, but smoked chicken is also good.


  • 6 cups diced or balled melons (watermelon and/or honeydew)
  • approximately ½ large watermelon
  • 1 red or white onion, peeled and finely sliced
  • 250 grams cooked prawns, halved


  • ¾ cup vinaigrette
  • 1 chilli, deseeded (or ¼ teaspoon ground)
  • ¼ cup finely chopped mint leaves


  1. In a large bowl, toss together the melon balls, onion slices and prawns with the dressing. Allow to marinate in the fridge for about 30 minutes before serving lightly chilled.


  1. Mix all the ingredients together.
