A refreshing summer salad with a fairly unusual combination of ingredients. The crisp, sweet melons go exceptionally well with the sharp onion and fresh mint in the dressing. I like prawns with it best, but smoked chicken is also good.
Ingredients
- 6 cups diced or balled melons (watermelon and/or honeydew)
- approximately ½ large watermelon
- 1 red or white onion, peeled and finely sliced
- 250 grams cooked prawns, halved
Dressing
- ¾ cup vinaigrette
- 1 chilli, deseeded (or ¼ teaspoon ground)
- ¼ cup finely chopped mint leaves
Method
- In a large bowl, toss together the melon balls, onion slices and prawns with the dressing. Allow to marinate in the fridge for about 30 minutes before serving lightly chilled.
Dressing
- Mix all the ingredients together.
