Mediterranean smoked fish salad


  • 3 tomatoes, blanched and peeled
  • 5-6 spring onions, trimmed
  • 2x 425 gram can Four Bean Mix
  • 16-20 olives
  • 150 grams sliced salami
  • 250 grams moist smoked fish
  • ½ cup roughly chopped parsley
  • 1 cup vinaigrette


  1. Dice the tomato finely and chop the spring onion.
  2. In a large bowl blend together tomato, spring onion, Four Bean Mix and olives.
  3. Finely shred or halve the salami. Tear the fresh smoked fish into bite-sized pieces.
  4. Gently toss the salami, fish and parsley into the bean mixture with the vinaigrette. Season with plenty of pepper. Serve in large bowls with plenty of crusty bread.
