Ingredients
- 1 slice pre-rolled puff pastry
- 1/2 cup mascarpone or spreadable cream cheese
- 2 tblsp brown sugar
- 4 canned apricot halves
- about 1/4 cup chocolate chips or chopped chocolate
- 1 tblsp crystallised ginger, chopped
- 2-3 tblsp syrup from apricots
Method
- Cut the pastry into four 10cm circles and place on a greased baking tray.
- Spread each evenly with mascarpone or cream cheese
- Slice the apricots and arrange on top.
- Scatter over the chocolate.
- Bake at 220°C for 12 minutes until the pastry is golden and well risen.
- Mix the crystallised ginger with the syrup and use to brush the top of the apricots before serving.
