Mascarpone Dessert Tarts

Mascarpone Dessert Tarts

Ingredients

  • 1 slice pre-rolled puff pastry
  • 1/2 cup mascarpone or spreadable cream cheese
  • 2 tblsp brown sugar
  • 4 canned apricot halves
  • about 1/4 cup chocolate chips or chopped chocolate
  • 1 tblsp crystallised ginger, chopped
  • 2-3 tblsp syrup from apricots

Method

  1. Cut the pastry into four 10cm circles and place on a greased baking tray.
  2. Spread each evenly with mascarpone or cream cheese
  3. Slice the apricots and arrange on top.
  4. Scatter over the chocolate.
  5. Bake at 220°C for 12 minutes until the pastry is golden and well risen.
  6. Mix the crystallised ginger with the syrup and use to brush the top of the apricots before serving.
