These darling-looking nibbles are indeed a mere mouthful of flavour. You can make them in no tme using bought pastry. Serve them warm or cold.
Ingredients
- 2 sheets pre-rolled frozen short pastry, defrosted
- ¼ cup finely grated Parmesan cheese
- 32 large marinated stoned black or stuffed green olives
- 75-100 grams mozzarella cheese
Method
- Sprinkle each sheet of pastry with 2 tablespoons parmesan cheese. Roll lightly so cheese is pressed into the pastry. Turn over so cheese is underneath and cut each pastry square into 16 equal smaller squares.
- Cut the mozzarella cheese into 32 small pieces and place a piece in the centre of each square. Top with an olive. Bring the 4 corners to the top and centre and squeeze together. Place on a well-greased oven tray.
- Bake at 190ºC for 15-18 minutes or until the pastry is golden brown. Serve warm.
Cooks Tips
- Use jumbo green stuffed olives or smaller marinated olives and cut pastry into 4 cm squares.
