Marinated olives in easy cheese pastry

These darling-looking nibbles are indeed a mere mouthful of flavour. You can make them in no tme using bought pastry. Serve them warm or cold.


  • 2 sheets pre-rolled frozen short pastry, defrosted
  • ¼ cup finely grated Parmesan cheese
  • 32 large marinated stoned black or stuffed green olives
  • 75-100 grams mozzarella cheese


  1. Sprinkle each sheet of pastry with 2 tablespoons parmesan cheese. Roll lightly so cheese is pressed into the pastry. Turn over so cheese is underneath and cut each pastry square into 16 equal smaller squares.
  2. Cut the mozzarella cheese into 32 small pieces and place a piece in the centre of each square. Top with an olive. Bring the 4 corners to the top and centre and squeeze together. Place on a well-greased oven tray.
  3. Bake at 190ºC for 15-18 minutes or until the pastry is golden brown. Serve warm.

Cooks Tips

- Use jumbo green stuffed olives or smaller marinated olives and cut pastry into 4 cm squares.
