Ingredients
- 500 grams small new potatoes, scrubbed
- 8 small new season carrots, washed
- 8 small scallopini
- 100 grams snow peas or green beans
- 4-8 small vine tomatoes
- ¼ cup maple syrup
- 1½ tsp grated ginger
- salt and pepper
- 2 tsp orange zest
- 1 tblsp fresh thyme leaves
Method
- Parboil the potatoes and carrots until barely tender, drain well.
- Cut 4 x 30cm squares on non-stick or grease-proof paper. Divide the vegetables evenly and place on the paper. Combine the maple syrup, ginger, salt and pepper, orange zest and thyme leaves and spoon over the vegetables.
- Draw the paper edges together and twist to secure. Steam the parcels for 8-10 minutes, or until the vegetables are tender.
- Serve in the paper parcels.
