Maple Glazed Vegetable Parcels


  • 500 grams small new potatoes, scrubbed
  • 8 small new season carrots, washed
  • 8 small scallopini
  • 100 grams snow peas or green beans
  • 4-8 small vine tomatoes
  • ¼ cup maple syrup
  • 1½ tsp grated ginger
  • salt and pepper
  • 2 tsp orange zest
  • 1 tblsp fresh thyme leaves


  1. Parboil the potatoes and carrots until barely tender, drain well.
  2. Cut 4 x 30cm squares on non-stick or grease-proof paper. Divide the vegetables evenly and place on the paper. Combine the maple syrup, ginger, salt and pepper, orange zest and thyme leaves and spoon over the vegetables.
  3. Draw the paper edges together and twist to secure. Steam the parcels for 8-10 minutes, or until the vegetables are tender.
  4. Serve in the paper parcels.
