Mango And Lychee Salsa

Ingredients

  • 2 mangoes
  • 1 red onion, peeled and finely diced
  • 565 can lychee\'s, well drained and chopped finely
  • 2 red chilli\'s, deseeded and sliced
  • 2 finely minced fresh ginger
  • 1/4 cup chopped chives

Method

  1. Cut the mango down either side of the long elongated stone. Score the flesh in long thin strips and then turn the mango inside out the push the skin upwards. This way the flesh can easily be removed. Trim the flesh from the skin and dice.
  2. Mix the diced mango with the red onion, lychees, chilli, ginger and chives. Allow to sit for 15 minutes at least to allow the flavours to marry.
