Ingredients
- 3 cups flour
- ¾ cup caster sugar
- 1 tblsp baking powder
- 1 tsp baking soda
- 2 eggs
- 1 cup fruit yoghurt
- 3 mangoes, pureed (or 1¼ cups)
- ½ cup milk
- 100 grams butter, melted
- ¾ cup thick cold custard
- icing sugar to serve
Method
- Sift the flour, sugar, baking powder and soda together into a large bowl.
- Mix the eggs, yoghurt, mango puree and milk together and fold into the dry ingredients with the butter.
- Half fill 12 well-greased muffin tins and then top with a teaspoon of cold custard. Top with remaining muffin mixture.
- Bake at 200°C for about 18-20 minutes until well risen and golden.
- Serve warm dusted with icing sugar.
