Mango And Custard Muffins

Ingredients

  • 3 cups flour
  • ¾ cup caster sugar
  • 1 tblsp baking powder
  • 1 tsp baking soda
  • 2 eggs
  • 1 cup fruit yoghurt
  • 3 mangoes, pureed (or 1¼ cups)
  • ½ cup milk
  • 100 grams butter, melted
  • ¾ cup thick cold custard
  • icing sugar to serve

Method

  1. Sift the flour, sugar, baking powder and soda together into a large bowl.
  2. Mix the eggs, yoghurt, mango puree and milk together and fold into the dry ingredients with the butter.
  3. Half fill 12 well-greased muffin tins and then top with a teaspoon of cold custard. Top with remaining muffin mixture.
  4. Bake at 200°C for about 18-20 minutes until well risen and golden.
  5. Serve warm dusted with icing sugar.
