Madras Baked Kumara

Ingredients

  • 4 even sized golden kumara
  • 2 tsp salt
  • 2 tbsp oil
  • 400 grams minced lamb
  • 1 tbsp each minced garlic and ginger
  • 1 tbsp curry paste
  • 2 tomatoes, very finely chopped
  • ½-1 cup grated cheese

Method

  1. Rub the well-washed kumara with salt and half the oil and place in a 190ºC oven for 40-50 minutes or until tender.
  2. Heat the remaining oil in a frying pan and brown the mince over a high heat. When brown, add the garlic, ginger and curry paste and cook a further minute.
  3. Add the tomatoes and simmer for 10 minutes until the mixture is very thick.
  4. Slice the top off each cooked kumara and scoop the cooked kumara into a bowl. Add the mince and mix together roughly. Return the filling to the kumara shells and then sprinkle each with a little grated cheese.
  5. Return to the oven for 10 minutes or until golden. Serve with your favourite chutneys.
