
Ingredients
- 4 large eggs
- pinch salt
- 125 grams unsalted butter
- 1 cup sugar
- grated rind and juice of 4 large limes or 6 small limes
Method
- Beat the eggs with a pinch of salt until smooth. Strain.
- Place the eggs, melted butter, sugar, lime rind and juice into the top of a double saucepan.
- Cook over simmering water for about 10-15 minutes, stirring constantly until thickened.
- Pot into hot sterilised jars and cover until cool. Seal and label.

Ideas with lime honey - Make quick mini tarts by filling pre-baked mini sweet pastry tarts with lime honey. Serve with coffee. - Whip ½ cup cream until thick and fold into 1 cup cold lime honey. Use to top a meringue or a sponge roll, as a trifle filling or for tiramisu with a difference. - Label bottles of lime honey and use as gifts for friends. - Take two sheets of pre-rolled puff pastry, cut in half and bake. Layer with fresh fruit like strawberries or raspberries, whipped cream and lime honey. Dust with icing sugar. - Serve with fruit or bran muffins in place of butter.
