Lemon & Pepper Chicken

Lemon & Pepper Chicken

So, so easy and so delicious. A family or flatters meal in minutes.

Ingredients

  • 4-5 cloves garlic, crushed, peeled and mashed to a paste
  • 100-150 grams butter, softened
  • grated rind and juice of one lemon
  • generous amount of freshly ground black pepper
  • salt
  • 4 chicken leg and thigh portions, also called Marylands
  • 4-5 starchy potatoes, such as Agria, peeled and cut lengthwise into quarters

Method

  1. Preheat the oven to 190 degrees Celsius. Line a shallow baking tray with baking paper
  2. Mix the garlic, butter, and lemon rind together with a generous seasoning of salt and freshly ground black pepper. Set half of the butter aside in a small frying pan or saucepan, melt and set aside.
  3. Separate the skin from the chicken portions and spread one-quarter of the softened garlic butter between the skin and meat of each portion. Place the chicken portions onto the prepared tray.
  4. Turn the prepared potato quarters in the melted butter and scatter around the chicken pieces. Pour any remaining butter on top, along with the lemon juice.
  5. Bake in the preheated oven for 30-40 minutes, Time will depend on the size of the chicken and potato portions. Delicious.
