Lemon pepper chicken paninis

Lemon pepper chicken paninis

Ingredients

  • 1 double chicken breast, skin removed
  • ¼ cup lemon-infused olive oil
  • 1-2 teaspoons lemon pepper seasoning
  • grated zest of ½ lemon
  • 3 tablespoons chopped lemon thyme or thyme
  • 6 paninis, split
  • lettuce leaves and watercress for 6 sandwiches
  • 1 large avocado, sliced
  • 125 grams Brie cheese, sliced

Method

  1. Finely slice the chicken breasts and toss with the lemon-infused olive oil, lemon pepper, lemon zest and lemon thyme. Cover and marinate for 15 minutes.
  2. Barbecue or pan-fry the chicken pieces until just cooked. Brush the split paninis with oil and grill or barbecue until hot.
  3. On one half of each grilled panini, put a layer of lettuce and watercress, and a few slices of avocado and chicken. Place the Brie on a hot grill plate for 10-15 seconds to just melt, then add to the panini filling. Season with pepper and cover with each remaining panini half to make a sandwich. Grill if wished. Serve soon after making.
