Lemon Oil Soaked  Haloumi With Prosciutto And Rocket

A versatile and tangy nibble for a party.

Ingredients

  • 200 grams haloumi cheese or use feta ( see Cook's Tip)
  • 3-4 tblsp lemon scented olive oil ( see Cook's Tip)
  • 100 grams sliced prosciutto
  • About 12 small rocket or watercress leaves

Method

  1. Cut the haloumi cheese into 2cm wide strips. Toss with the oil and set aside for 5 minutes.
  2. Wrap each stick with prosciutto and then cut into cubes. Place on a serving platter, top with a rocket leaf and secure with a skewer. Serve as a nibble. Alternatively quickly grill each stick before cutting and serving.
