Lemon kiss cookies

Lemon kiss cookies

Traditionally filled with jam, for a change use lemon butter. The pairing of lemon and mace is particularly nice.


  • 125 grams butter
  • ½ cup caster sugar
  • 1 egg
  • grated rind 2 lemons
  • 1 cup flour
  • 1 cup cornflour
  • 1 teaspoon baking powder
  • 1 teaspoon ground mace or nutmeg
  • ½-¾ cup lemon honey or lemon butter
  • icing sugar for dusting


  1. Beat the butter and sugar together until creamy. Add the egg and lemon rind and beat well.
  2. Sift together the flours, baking powder and mace or nutmeg and stir in.
  3. Place heaped dessertspoonfuls of mxiture onto a greased baking tray.
  4. Bake at 180ºC for 12-15 minutes until the cookies are firmish to the touch and have begun to brown lightly. Cool on a cake rack.
  5. Join two similar shaped cookies together with lemon honey and dust with icing sugar to serve. Store in an airtight container.
