Lemon delicious pudding

Lemon delicious pudding

Simply one of my all-time favourites.


  • 50 grams butter, softened
  • ½ cup caster sugar
  • 2 large lemons, grated rind
  • 2 eggs, separated
  • ¼ flour, sifted
  • 1 cup milk
  • ¼ cup freshly squeezed lemon juice
  • icing sugar to serve


  1. Beat the butter, sugar, lemon rind and egg yolks together until light and fluffy. Gently stir in the flour, milk and lemon juice.
  2. Put the egg whites in a clean bowl and beat until they form stiff peaks but are not dry.
  3. Fold the two mixtures together and pour into a well-greased 3-4 cup capacity ovenproof dish.
  4. Bake at 160ºC for 30-35 minutes in a water-bath until the top is golden and firm to the touch. Serve dusted with icing sugar and accompanied with ice cream for a delicious dessert.

Cooks Tips

- Use a mix of limes and lemons or try an orange version with 2-3 tablespoons of flaked almonds added. - A water bath is also known as a bain marie.
