Quick, easy and delicious! Makes a great addition to the lunch box.
Ingredients
- 1½ cups flour
- 2 tablespoons sugar
- 125 grams butter
- 1 egg yolk
- 2-3 tablespoons milk or water
- 1 kilogram apples, peeled
- 2 tablespoons sugar or honey
- ½ cup dried fruit (use mixed, raisins, Craisins, sultanas)
- ½ cup chopped walnuts or pinenuts
- 2 teaspoons mixed spice
- ½ cup white breadcrumbs or ground almonds
Method
- Sift the flour and sugar into a bowl and cut in the butter until it resembles fine crumbs. Stir in egg yolk and sufficient milk or water to make a stiff dough. Roll out to line the base and sides of a 24cm flan tin. Trim the pastry edges. Refrigerate while preparing the filling.
- Grate the apple coarsely and toss with the sugar or honey, dried fruit, walnuts and spice. Scatter the breadcrumbs or almonds over the pastry. Spread the apple over almonds, discarding any excess juice that forms at the bottom of the bowl.
- Bake at 200ºC for 30 minutes until the pastry is cooked and apples softened and tender.
- Serve warm drizzled with lemon icing with plenty of whipped cream.
Lemon Icing
- Make a thin icing from the grated lemon rind and lemon juice of 1 lemon, 1/2 cup icing sugar. Pipe or drizzle on top of the tart before serving.
