Laurice's Fruit Slice

Laurice's Fruit Slice

Laurice is the mother of a girlfriend who I met at school in Eltham, her slice is great as a lunchbox filler.


  • 100 grams butter
  • 1 tblsp golden syrup
  • ¾ cup caster sugar
  • 1 egg
  • 1 cup self rising flour
  • 1 cup coconut
  • 1 cup mixed fruit
  • ½ tsp vanilla essence
  • icing sugar to dust with


  1. In a saucepan melt the butter, golden syrup and castor sugar. Cool. Add the egg and beat well.
  2. Stir in the flour, coconut, mixed fruit and vanilla essence.
  3. Spread into a greased and paper lined 20cm x 30cm slice tin.
  4. Bake at 160ºC for 25-30 minutes until cooked. Allow to cool in the tin for 10 minutes. Dust with icing sugar or ice and cut into slices or squares.
