Lamb Loin Chops With Spiced Herb Rub

You can vary the flavour of this recipe to your liking by using different combinations of herbs.

Ingredients

  • 8 Quality Mark lamb loin chops
  • 4 tblsp oil
  • juice one lemon
  • 1/2 tsp ground cinnamon
  • 2 tblsp chopped fresh herbs (marjoram, parsley or rosemary)
  • 1 tsp freshly ground black pepper

Method

  1. Tie the lamb loin chops into a neat circular parcel if wished. This will ensure a good shape when cooked.
  2. Place in a lidded container. Mix together the oil, lemon juice, cinnamon, herbs and pepper and pour over the loin lamb chops. Turn the chops to coat evenly. Cover and refrigerate for 2 hours or up to overnight.
  3. Grill the chops under a high heat or pan-fry in a hot pan for about 7-8 minutes turning once or until cooked to your liking.
  4. Stand for 2-3minutes before serving with seasonal vegetables.
