You can vary the flavour of this recipe to your liking by using different combinations of herbs.
Ingredients
- 8 Quality Mark lamb loin chops
- 4 tblsp oil
- juice one lemon
- 1/2 tsp ground cinnamon
- 2 tblsp chopped fresh herbs (marjoram, parsley or rosemary)
- 1 tsp freshly ground black pepper
Method
- Tie the lamb loin chops into a neat circular parcel if wished. This will ensure a good shape when cooked.
- Place in a lidded container. Mix together the oil, lemon juice, cinnamon, herbs and pepper and pour over the loin lamb chops. Turn the chops to coat evenly. Cover and refrigerate for 2 hours or up to overnight.
- Grill the chops under a high heat or pan-fry in a hot pan for about 7-8 minutes turning once or until cooked to your liking.
- Stand for 2-3minutes before serving with seasonal vegetables.
